From French regional (Burgundy) aligoté variety of vine, variety of grape, kind of white wine made from these grapes, perhaps an (otherwise unattested) survival of a use as noun of the past participle of Old French haligoter, variant of harigoter to tear up, perhaps so called on account of its inferior quality.
